Syllabub
Syllabub was an interesting colonial concoction that was either enjoyed as a drink or as a dessert. As the former, it was made with fresh warm milk and sweetened cider, ale, or wine. It would have a frothy top and be garnished with fruit. Occasionally you would find it made with egg whites as well.
To make it into a dessert whipping cream would be used to make the whole thing thicker. Then it would be eaten with a poon after your main meal. The dessert/drink was often served on and around Christmas, as a rich and creamy festive treat.
