#17: Thomas Jefferson Did Not Invent American Mac and Cheese
Jefferson encountered macaroni dishes in Europe, acquired a pasta-making machine, and later served macaroni at the White House. But saying he “introduced mac and cheese to America” erases other people—particularly James Hemings, the enslaved chef Jefferson trained in French cooking. Hemings learned sophisticated European techniques in Paris and helped bring them into Jefferson’s household. Macaroni already existed in America before Jefferson’s presidency. His real contribution was helping popularize fashionable pasta dishes among elite diners.
