There is no mystery to the symbolism here, and that is part of its beauty. Long noodles stand for long life. At birthdays, Lunar New Year meals, and other celebrations in many Chinese homes and communities, the noodles are often served uncut so their length can carry the blessing intact. Eating them can become a funny, careful little performance, especially when a strand refuses to cooperate. Someone may laugh, someone may remind the birthday guest not to break it, and suddenly, the meal has a wish woven right through it.
