This gooey cake wasn’t always a staple of the region, though. Its entire existence is an accident! Back in the 1930s, a baker in St. Louis wanted to bake a coffee cake. He made a critical mistake and used “too much butter,” leading to what we today know as the St. Louis Gooey Butter Cake. If you have ever had one of these cakes you know how delightful of a mistake this one was. Safe to say, thanks to the legend who invented it, unbeknownst to him.
