Scrapple
Speaking of not wanting to waste anything available to them, the hard colonial life impacted the choice of foods available to the colonists. Scrapple is the result of these difficult considerations and the ingenuity that they often led to.
Scrapple is really just a meatloaf made from leftover pigs, sheep, and cows: the “scrap” that was left over after something had been filleted and skinned. Still, a meatloaf made from heart, brain, ears. That doesn’t sound appetizing to me, even if it would have gone down very well further back in history.
