Clabber
Preserving foodstuffs was a constant concern of the colonists. They didn’t have fridges, and ice was hard to come by, so they had to find different and ingenious ways to make the food that they had, last as long as possible. Fermenting was one way of doing this, as well as being pretty good for digestion.
Clabber was milk that had turned sour, or fermented at a particular temperature. Milk left to curdle would turn into something like yogurt, which would then be flavored with whatever was around at the time. The fermentation of food and drink was an important weapon against nature for the colonists.
