Roast hedgehog
I find this one a little hard to stomach, as I love these cute little spiky rolly polly creatures. It’s fairly recently that we have come to look upon the small rodent as cute and worthy of protection, though. Like most small but meaty animals, hedgehogs were trapped and eaten by the colonists.
Traditionally the animal would be stuffed with herbs, wrapped in pastry, and baked in a hearth. I’m not going to lie, it does sound quite tasty. Cooking tips included putting the hedgehog in hot water if it refused to unroll so you could skin it properly!
