Jellied moose nose
It just gets better, doesn’t it? Moving on from cow tongue to moose nose. Jellies were incredibly popular amongst our colonial forebears, mostly because they were another useful way of preserving food. Moose was in plentiful supply across North America, so it made sense that it would make it into usual diets.
Jellied moose nose was a delicacy made by boiling the jaw of the moose, removing the meat, and putting it in moose broth overnight. It would make a flavorful pudding, served with bread. Finding a moose is a little harder these days, so you could substitute a pig or cow if you fancied giving it a try.
