Tongues
Yet another part of the animal that could be used by these resourceful colonists was the tongue. A common cut eaten all over the world at different points in history, it’s only relatively recently that modern society has started to turn its nose up at it. In fact, it can be a useful cooking ingredient.
For many decades, the cow tongue was an essential part of a Thanksgiving pie. The collagen in the tongue is activated in lengthy cooking and makes the meat surprisingly tender. It would have been expected that a cook in colonial times knew what to do with the tongues of most animals.
