Chicken livers
It wasn’t just the larger animals, like pigs and sheep, that had to be completely used up once they were killed. Chickens too were the source of interesting meal options. A particularly popular dish, also often eaten in the South, was fried chicken livers.
Chicken livers are pretty healthy, and a strong source of vitamin B12 and vitamin C. Frying them probably makes them slightly less healthy, but infinitely tastier. They can be found roasted in South America, and in Spain to this day. I can confirm that they don’t taste too bad!
