Mutton
While we may be much more familiar with the younger sheep meat, lamb, colonists would frequently eat mutton. Mutton is the meat of a sheep over 1-year-old and is usually much tougher. Cooked in the right way, however, it can still be part of a tasty stew or roast dinner.
If you had a few sheep then you were doing alright for yourself. You could have milk, wool for clothes and blankets, and then, once the animal got old, meat for your table. The rest of the sheep would also be used, but we’ll get to that in a minute.
