Getting Cheesy With Red Leicester
The Brits love their cheese and while they usually go for cheddar, red Leicester is another top favorite. This is a hard cows’ milk cheese, named after the city of Leicester, made in the same way as Cheddar. However, it has a milder flavor and a crumblier texture.
Initially, the reddish-orange color came from carrot and beetroot juice but these days, it’s colored with a vegetable dye called annatto. It matures faster than Cheddar cheese and can be sold when it’s as young as two months old. It can be eaten with toast, pasta, in a baked potato, or used to make a nacho cheese sauce. It’s also perfect as a cheeseboard addition.
